COOKING WITH FIRE

We use our oven for baking, smoking, roasting, searing, pizzas, tacos, and more. It is the heart of The Blue Goat. The oven reaches cooking temps of over 800º by the end of the business week—we let it cool down while we’re closed in order to develop a rhythm. Smoking and lower temp activities are best accomplished early in the week, and the morning baking is absolutely resplendent near the week’s end. The oven is so well insulated, with double earthen walled construction, that despite the intense internal temperatures, it’s cool to the touch on the outside surface.
